Directions :

Make the jam:

  1. Put the frozen strawberries in a small pot over medium heat.
  2. Stir in 2 Tbsp maple syrup.
  3. Cook 6–8 minutes until the strawberries break down and thicken.
  4. Stir in 2 Tbsp chia seeds and remove from heat.
  5. Let cool until jam is thicker.

Make the bars:

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch pan with parchment.
  2. In a bowl mix 1 cup quick oats, 3/4 cup oat flour, 1 tsp baking powder, and 1/4 tsp salt.
  3. In another bowl mash the bananas. Add 3 Tbsp maple syrup and 1 tsp vanilla. Mix.
  4. Stir the wet mix into the dry mix until combined.
  5. Press half of the oat batter into the bottom of the pan in an even layer.
  6. Spread the cooled strawberry jam over the bottom layer.
  7. Drop spoonfuls of the remaining batter on top and gently spread to cover the jam.
  8. Bake 20–25 minutes until edges are golden and top is set.
  9. Cool completely in the pan before slicing into bars.
