Description

Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup spinach, chopped
  • 2 cups ricotta cheese
  • 2 cups marinara sauce
  • 3 cups mozzarella cheese, shredded
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add onion and garlic, sauté until translucent.
  5. Stir in zucchini, bell pepper, and spinach; cook until vegetables are tender.
  6. Combine ricotta cheese, oregano, salt, and black pepper in a bowl.
  7. Spread a layer of marinara sauce on the bottom of a baking dish.
  8. Layer 3 lasagna noodles, 1/3 of the ricotta mixture, 1/3 of the vegetables, and 1/3 of the mozzarella over the sauce.
  9. Repeat the layers twice more, finishing with noodles and sauce.
  10. Top with remaining mozzarella cheese.
  11. Bake in preheated oven for 30 minutes or until cheese is bubbly.
  12. Let stand for 10 minutes before serving.

Notes

For a lighter version, use low-fat cheese or pesto instead of marinara. Serves well with a side salad.
