- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 cup mushrooms, sliced
- 2 cups spinach
- 3 cups marinara sauce
- 15 ounces ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package directions; drain.
- Heat olive oil in a pan over medium heat. Add onion and garlic; sauté until translucent.
- Add zucchini, bell pepper, and mushrooms; cook until tender. Stir in spinach and cook until wilted.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles over the sauce, then spread half of the ricotta cheese over the noodles.
- Add half of the sautéed vegetables and a layer of mozzarella cheese.
- Repeat the layers, finishing with noodles and marinara sauce on top. Sprinkle with remaining mozzarella and Parmesan cheese.
- Bake in the preheated oven for 45 minutes, covered with foil.
- Uncover and bake for an additional 15 minutes until cheese is bubbly and golden.
