How to Make Maltesers Rocky Road

Ingredients

  • 250 g Dark chocolate
  • 200 g Milk chocolate
  • 200 g Butter or baking spread
  • 150 g Golden syrup
  • 100 g Malted milk OR digestive biscuits (broken up)
  • 75 g Mini marshmallows (gelatine free if serving to vegetarians, I use Freedom Mallows)
  • 200 g Maltesers
  • 75 g Malteser Teasers or Maltesers Buttons (optional)
  • 35 g Maltesers

Directions

  1. Line an 8" square tin with baking paper. Grease the tin with a little butter to make the paper stick.
  2. In a pan, put the butter, golden syrup, dark chocolate, and milk chocolate. Melt everything together on a low heat, stirring until smooth.
  3. Once melted and mixed, take it off the heat and let it cool for 10 minutes.
  4. While cooling, get a mixing bowl and add in the broken biscuits, marshmallows, and Maltesers (add Malteser Teasers if using).
  5. Pour about two-thirds of the chocolate mixture into the mixing bowl. Stir everything to cover the fillings with chocolate.
  6. Transfer the mixture into the lined tin. Smooth it down and add the rest of the chocolate mixture to fill any gaps. Tap the tin on the work surface a few times to remove air bubbles.
  7. Scatter the remaining Maltesers on top. Cut some in half with a knife and place them around.
  8. Put the tin in the fridge for overnight, or for 3-4 hours until it sets.
  9. Once set, remove from the tin and slice into pieces.

You can store the rocky road in the fridge for a firmer texture or in a cool place for a softer one. It can last for 1-2 weeks in an airtight container and up to 3 weeks in the fridge.
