Classic Vegetable Lasagna

Description

A delicious and hearty vegetable lasagna that is perfect for family dinners.


Ingredients

Scale
  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 3 cups marinara sauce
  • 15 ounces ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package directions; drain.
  3. Heat olive oil in a pan over medium heat. Add onion and garlic; sauté until translucent.
  4. Add zucchini, bell pepper, and mushrooms; cook until tender. Stir in spinach and cook until wilted.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles over the sauce, then spread half of the ricotta cheese over the noodles.
  7. Add half of the sautéed vegetables and a layer of mozzarella cheese.
  8. Repeat the layers, finishing with noodles and marinara sauce on top. Sprinkle with remaining mozzarella and Parmesan cheese.
  9. Bake in the preheated oven for 45 minutes, covered with foil.
  10. Uncover and bake for an additional 15 minutes until cheese is bubbly and golden.

Notes

Let the lasagna cool for 10 minutes before slicing and serving.
