Description

A hearty and flavorful vegetarian lasagna packed with layers of cheese, vegetables, and marinara sauce.


Ingredients

Scale
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, chopped
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 cups marinara sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil the lasagna noodles according to package instructions until al dente.
  3. In a bowl, mix ricotta cheese, spinach, salt, pepper, and oregano.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Layer three lasagna noodles over the sauce.
  6. Spread half of the ricotta mixture over the noodles.
  7. Add a third of the mozzarella cheese on top.
  8. Repeat the layers: sauce, noodles, ricotta mixture, and mozzarella.
  9. Top with remaining noodles, marinara, mozzarella, and grated parmesan cheese.
  10. Bake for 45 minutes, until the cheese is bubbly and golden brown.
  11. Let it cool for 10 minutes before serving.

Notes

For added flavor, include fresh herbs like basil in the ricotta mixture. Serve with a side salad.
